Radiator fans draw a lot of amps. Start with the basics, battery and alternator. Sounds like when they are turning on the car can't provide sufficent power. Check you battery connections, make sure they are clean and tight. Wouldn't hurt to look the fuses and relays too.

I would check all the sensor harnesses for corrosion[green crap].pick up a small wire brush set and some brake parts cleaner from walmart to clean the connectors with...

what he said for the most part.
sounds like you've got a loose wire or something between your alternator and battery. check them to make sure they're not corroded or damaged.
also check battery to chassis ground and chassis to engine.
