I have a 96 Maxima Gle edition with 90,000 miles on it!
In the coming weeks I'll be changing out the struts.
Do you think I should change the springs and strut mounts all at one time or just do the struts? Also what is a
good strut brand to go with?

...is Koni's are the best way to go. I believe they're 3-way adjustable and they hold up better than Tokicos, which are the other high performance choice. I have the Tokico's and I feel they are a little to bouncy for a high performance strut. I'd like to switch over to Koni's as soon as I get the money. What end result are you looking for? Do you want the car lowered for looks or are you wanting it to perform as well?

Unless you intend on lowering your car, no need to change the springs. As for the strut mount, or strut bearings, now would be a good time if you beleive in "preventive maintenance". I personally will wait until they "take a dump" as I have tools, time and know how.
