Knock Sensor and Engine Coolant Temp Sensor
Got the check engine light and pulled the codes – actually got three of them (took awhile to figure that out).
0103 and 0908 -both point to the Engine Coolant Temp Sensor and 0304 - Knock Sensor.
Also read the detailed definitions on these codes and still do not have a clue if these potential problems are serious or require immediate attention. The car (96 I30 with 120k) seems to be running fine.
Should I just reset the check engine light and forget about it until when or if a problem does crop up or take it to the shop as soon as possible?
Final Question: If I reset the check engine light will the light eventually come back on and can the problem codes still be pulled after I reset the light?

It will come back eventually. My advice, take a saturday off for a few hours and just change the sensors. The coolant sensor is cake to change. Follow the upper radiator hose on the right side of the engine to the block and theres 2 sensors on the metal sleeve. The smaller of the 2 is the coolant sensor. The Knock Sensor I have never changed, however it can be done with alot of patience. It sits under the intake manifold. I would advise you change the knock sensor as well, it will give you bad gas mileage and performance as your ECU will retard the timing and you will be running in "safe" mode.
