Does anyone know when the movie is coming out on DVD? I missed at the theater.

Supposed to be out in November/December timeframe. As far as extras on it, no details yet. It should sound pretty good in 5.1. Maybe they will put it in DTS or 6.1/7.1 ex.

I just got some more speakers last night that will become rear ones so those should sound nice if they do go for a better surround sound. Next though is the subwoofer to make some real pound.

I'm sure that it'll be encoded with 5.1 and most likely DTS. But with 6.1 or Dolby digital surround ex, I doubt it cause that's only been present in theaters for about 2 years.
But it doesn't need to have the 6.1 encoded on the DVD to replicate the sound. There are high end receivers that matrix the left and right rear channels for an additional speaker (rear center) to mimic the 6.1 sound. It won't be TRUE 6.1 sound, but it'll be real close.

As for 7.1, there isn't a standard for that. It's just the same process of taking existing seperate channels and making additional channels just like the 6.1 replication.
