So wouldnt it almost seen more logical to let it sit in the intake and do nothing (maybe restrict airflow slightly) Instead of sending it to be burned away in the combustion chambers where it could leave carbon residue in there?

Why restrict the air flow? Get that gunk out of there and let it be burnt on the way out. Hence the high amount of smoke after putting the seafoam in the intake.
I did both, use seafoam in the intake, and then removed the entire intake system to change the valve cover gaskets. The intake runners that got seafoam in them were a lot cleaner than the ones didn't.
