Point being, your coolant may well be at the proper temperature.
However, a faulty temp. sensor may be conveying incorrect signal to the gauge.
As as I recall they’re super cheap ... a little bit a hassle to get to but, that’s a 4th gen., right?
Or maybe try one of these ...

Radiator cap release pressure (11-14 psi) could make your car running hot. Each additional pound causes coolant temp to rise 3 degrees (F). Note that you are using aftermarket thermostat and rad cap. Coolant temp for normal driving is 210-220 degrees (F). Look like your fan works but it takes sometime to bring temp back to normal range.
