I was wondering if it's possible to grab the spare tire in the trunk through the back-seat after removing the back-seat in a Maxima GXE 97 ?

If I remember correctly, yes, but it's quite a process. The seat bottom has two pull tabs, then it lifts up and out of the way. The seat back has bolts in the lower corners. With the bolts removed, the seat back lifts up and out of the way. Then there is a metal panel covering the trunk opening. I forget how many bolts hold it in place. The only time I have removed one was in an attempt to access the locked trunk of a vehicle in a junkyard.

Will your trunk not open with the key or remote release?
