If the parameters are stored in an EPROM, then no they will not change until the EPROM is reprogramed again.
An EPROM is an Erasable, Programable, Rear Only Memory chip. That means it needs to be reprogrammed to change any stored values. Disconnecting the battery does not reprogram or erase an EPROM chip.

One way to find out is to have the technician advance the timing, then at that point disconnect the battery, and have him check the timing once you re-connect the battery. I'm sure if you do all this within one stop then you will not be charged extra. If the timing went back to OEM specs after disconnecting the battery then you can have him advance it again.

Doesn't it take up to 24hours sometimes to reset the ECU?

Lots of discussion about resetting the ECU. Some say 24 hours, others say press the brake pedal after disconnecting the battery to drain all the power.
I recommend disconnecting the battery and pressing the brake pedal until you dont see the brake lights any longer. Then reconnect the battery and check the ECU to see if the timing has a changed from your previous setting.
