Just wondering, my last car idled at 1000, but this maxima idles at what looks to be 700 RPMS, doesn't feel like it's too low, but I just want to make sure.

You’re fine; most autos will idle between 650 and 800rpm. Keep in mind the gauges in your vehicle are indicators, not instruments and are not calibrated. Also the idle rpm is on a sticker under your hood: if it wasn’t 6am and 16 degrees outside I’d go look.

700 or so is right.

Yes...about 700 rpm here as well when the engine is fully warm. When cold, it starts at about 1500 rpm and slowly walks down with engine temp.
