WOT, when?

Angela and I have had our 2k1 SE AE for 3 months now. We have just about 2000 miles on it. So far I have been taking it pretty easy on the engine. Only once have I let it rev over 5k. Everyone seems to have an opinion on when it is sufficiently broken in enough to start standing on the throttle. I am looking for facts about when it is safe for WOT happiness. I took it easy on my Protege for the first few thousand miles and it hasn't had any engine problems in 120,000 miles and revs to redline willingly.
What happens if I get happy with the Maxima this early in the game?
Also, should I get the oil changed yet or wait until I reach 3500 miles?

oil change
As much of a car nut and perfectionist as I am I have never believed in the 3k oil change. I have 120,000 miles on my 10 year old Protege and have never changed the oil sooner than 7500 miles. And it only used 2 quarts of extra oil the entire year last year.
I was planning on getting the oil changed in the 2k1 AE at 3750 like the book said but didn't know if I should wring it out before or after the change. If I wring it out before the change I can get rid of any metal in the cylinder walls that hasn't been hit before due to babying it. Then it will be another 7500 miles before the second change. By the book (of course I didn't get off my butt to go down and check the book but I think that's what it says).
I know the book says 3 months but I didn't think oil degrades over time. Only use causes it to degrade. So why do the change at a time interval instead of a mileage interval?
