Shop overfilled my 5 speed tranny and I drove for 2 weeks. I gave them 5 quarts of Red Line and how to print out. they gave me back one bottle and there was some left. I assumed they put 4 1/2 quarts. Yesterday I was doing some cleaning in the basement and noticed red line bottle, before I tossed it I opened it and it was almost empty. So went and unscrewed the fill plug and fluid came out, at least half a quart. It was clean, no bubbles and no metal shaving.
What kind of damage could this cause if any?

We're you on level ground when you opened it. It's pretty hard to over fill a manual trans and get the fill plug in before it drains out. Also there wouldn't be and metal shavings as they would have sunk to the bottom of the trans.
Yeah, you pretty much can't overfill it. The level meets the fill plug, so any excess just spills out.
I actually tried to overfill as much as possible and get the drain plug back in before it all drained out.

I'm not fimilar with filling it in that manner. After disconnecting what ever they used to do the pumping the oil would just drain out until the plug was replaced. Not only would the guy have to be fast this would also be pretty messy. It's much easier to use a funnel with a hose and fill it from the top. This doesn't sound like a good shop, if it is the tech sux.
When you drain the trany the 1st thing you do is open the filler plug so when the drain plug is pulled you get good flow. (Sometimes people like to pour a 1/2qt of new thruogh it to give it a mini flush)Then once it's done draining you replace the drain plug and fill it up (while it's level) then replace the fill plug. In a shop this is a 10-15 min job.
When I did it in my garage I jacked the car up to get to the drain plug then lowered it to drain then jacked it back up to replace the plug. Lowered it and filled. 1/2hr
