In-cabin filter
Has anybody replaced their in-cabin filter on their own? Do you recommend doing it yourself or having the dealer do it? I think to replace it, you have to get behind the glove box. I'm worried that if the dealer does it, I'll get the car back and will start hearing rattles. I have about 30K miles on the car. Maybe I just won't replace it. What harm could it do?
I did mine myself. Not too difficult. Just make sure you don't unplug that airbag plug. As far as rattles, just make sure you screw everything back in really tight. If you don't replace, you may start getting a funny smell when you turn on your vents. You can just take the whole filter out and not put a new one in as all the 5th gens have that slot there, 00-01 the filter being included was optional.

In-Cabin Air Filter
I don't have a Maxima, but instead drive a 2002 Sentra that is equipped with the cabin air filter. From what I understand, the procedure is the same on both cars. I changed mine myself, and I am not exactly mechanically-inclined.
Just open the glove box, squeeze the sides of it together enough to get the two 'pegs' to clear the box's frame. Drop out the glove box and the filter will be easily accessible from there (you will see it). If I recall correctly, it was a matter of one or two clips and snapping it right out of there.
When you put the new one in, be sure not to do it upside-down.
The owner's manual recommends replacement every 15k. I waited until almost 30k to do mine and it wasn't all that dirty. Maybe it depends upon how much you use your A/C....I don't know. They say that if your windows fog easily in warmer weather, you might need a new filter element. (But then again, Nissans have always been prone to that -- long before the cabin air filters even existed.)

it may be like that in a sentra, but there are three to five ( cant remember) screws you also have to deal with, but other than that...its basically the same, and its definitely a no-brainer
