Your car will definitely be louder than stock, but there are some things you can do to tone down the rice factor. You mentioned both a b-pipe and a Greddy exhaust. Do you mean a Greddy muffler? A catback exhaust replaces the b-pipe, so you wouldn't want to buy an aftermarket b-pipe and a full catback.
Anyway, if you buy a b-pipe with a perforated-core resonator in it and attach it to the stock muffler (which flows pretty well for a naturally aspirated Maxima with bolt-on mods), that will help to keep your sound manageable.

Oh, I forgot to mention the WAI. I have one installed, and it will not make any significant change in your Maxima's sound under normal driving conditions. You may notice a slight rumble around 2000-3000 rpms, and there is a tiny chirp/hiss sound when you shift, but it will sound very close to stock. The only time the intake will roar is when you floor it. Mine growls from 4000rpm to redline.

the catback includes the muffler which really isnt going to get you much if any performance. if i were you id go with the y pipe, b pipe w/resonator to the stock muffler.
