My 2001 Maxima is almost due for an oil change (3,000 miles). Can someone tell me what motor oil I should use on my Maxima?

Put regular non-synthetic oil for now. Any decent brand will do, so you may want to use the free oil change from Nissan

When the car has 6-7K miles, you may switch to synthetic. I personally recommend Amsoil (hard to find) or Mobil 1 synthetic (may be a better choice if you don't want to mail order it every time). Change it every 3K, don't listen to people who say it will last 5-10-20 thousand miles.

I drive with Amsoil 5W30.

I don't think I'm gonna switch to synthetic I use Castrol GTX btw

Nobody is going to "tell" you to change your oil at certain intervals...but tests have shown that changing oil ever 3K miles in not necessary for synthetic. And anyways...even for conventional oil, Nissan "recommends" oil change every 3.75K miles.
