I know, you're supposed to put 91+ grade gas in Maximas. If you put lower grade gas in it, it might ruin the engine, or whatever, the knock sensor, etc. We're buying a used one (2000) and I don't know if the previous owner used 91 or lower grade. If I start putting t 91 in will the knock sensor adjust back, or putting lower grade permanently does something to the engine?

Knock sensors don't adjust back. It's a reactive type sensor.
Just use the recommended fuel grade as stated by your owner's manual and you will be fine.
I would be much more worried by the previous owner's driving habits and maintanence than what grade of gas he was using.

I have a question about fuel grades. The guy I bought my Max from told me outright he used the 87 Octane (very honest guy). It's been almost a year and I've used 91,92,93 every time but could my computer have retarded the engine and never reset it? Should I disconnect the battery or would it reset itself?
Also, I change elevation of nearly 3000 ft daily. Does it automatically adjust for this? My other (older) car has a hard time with this going into surging fits at idle, unless it's reset fairly often.
