People I respect say that frequent oil changes in a new car will delay break-in. Any thoughts?

I switch to Mobil 1 at around 1000 on all my cars. Modern engines don't need much of a break-in. If you are not using oil, then the rings have seated. Mobil says you can use Mobil 1 right from the get go. I believe it. None of my cars have ever used much if any oil between changes.
I think the reason Nissan says to run your car easy for 1200 miles or so it to break-in not only the engine (which like I said, is most likely broken in at the factory) but the transmission, drive-train, tires, brakes, shocks, springs, etc.
