I'm at 800 miles and have been driving it like a grandma (most of the time it stays under 75). Ive been reading stuff online and trying to find threads on here. Should I get an oil change in the first 1000 miles or wait till it hits 3000 miles?
It is certainly not 'necessary' to change early. I continue to change my new vehicles at about 1,500 miles - but I am very **** about almost all aspects of vehicle maintenance.
I will say that based on the appearance and feel of the oil coming out at 1,500 - I'm glad I changed it.

Personally I'll do it at 3-500, then again at 1500, then start in regular 3k changes at the 3k mark. Might be a bit excessive now considering newer engines don't have the slop and break-in that the older engines do, but damn, old habits are hard to break.
Did the service team change the oil and ask you to bring it back after 3000 more miles, or did they not change the oil and ask you to bring it back for your first change at 3000?
That sounds a bit ridiculous. Just follow the owner's manual. On all my Nissan and Infiniti products, I took it in for the first oil change at 3750 and then again at 7500. I put full synthetic in at 7500 and then started every 5 or 7.5k mile interval changes. If you put full synthetic in, there is not reason you can't go 5k or 7.5k between oil changes.
It's work fine for me over the years. Some of the Nissan and Infiniti stealers get a little ridiculous with their oil change intervals in order to hose you for money.
