AC not turning on

I have a 2017 nissan maxima sr. I bought it salvaged and I have replaced the front wiring harness for the headlights, radiator, ac condensor, bumper and all that good stuff but I think after I hit a deer in it my AC stopped working. Now the car is rebuilt and the ac control doesn't even turn on. I doubt there is a leak, but I know there is very little freon in the car. I know it could be that or a bad compressor. Also, the heated seats and and sport mode button has stopped working as well. I doubt that there is any wiring problems with the ac and heat but I don't know what is wrong with the center console. I know how to take it apart but I remember connecting everything back up. If anyone could help me, then j would be deeply appreciative!

You've answered your own question. When the car is low on freon, the compressor won't turn on.
Depending on the severity of the accident with the deer, the accident likely caused all the freon to escape the ac system as things got damaged/bent/broken etc.
