Is there any way I can hook up a computer to run on an LCD monitor?

You need to have a video card with a TV out option or a PC to TV converter if you are going to use most LCD screens out there.

if I didn't want to run the computer off of my car battery, could I just buy another one and put it in the trunk or something?

Yes, BUT, if you put another battery in the trunk, how do you plan on recharging it? Is there a reason why you don't want to run it off the main battery under the hood?

Well, I was just thinking that maybe the computer and the LCD screen would use up my main battery a lot.

Avoid prolonged use of those and any amp'd system without the engine on. When the engine is on, your alternator is recharging your battery and providing ample power to your system. When the engine is off, only the battery powers your gear.
