Are all wood trim kits pieces that stick on over the stock interior? Are they easy to install?

yeah they are

stick on. i say take a razor and cut some of the 3m adhesive material off so after time it wont come out.. then use a blow dryer and put it on hot adn warm the sucker up so it's nice and soft to help ease installation.. another good thing to do is wipe wherever the dash kit is going to b applied with rubbing alchol.. it'll help it stick but keep in mind that the rubbing alchol might ruin the plastic so dont' apply it to areas where the dash kit will not cover.
