Why does an air filter ->
make your car louder? It's kind of a pointless question but I haven't been able to find anyone that's been able to answer it. I've gotten "because your car takes in more air" and "your stock airbox covers something that makes noise" (this one was, I think, a really stupid answer).

The stock airbox assembly is carefully shaped and sized to eliminate most of the intake noise. When you yank all that off and just put an open filter, none of the noise is suppressed...simple...
The function of the stock airbox are:
1) Provide a reasonable amount of air to the engine
2) To provide the air from a reasonably cold source
3) To provide the air in a quiet manner.
If you get rid of the stock airbox, among other things, you lose #3. The stock airbox is designed to eliminate as much noise as possible sorta like the exhaust muffler.

...is actually the *right* answer.
The stock intake airbox is more than just some place to mount the filter. All the webbing inside is designed to stiffen the aitbox so that it doesn't resonate...the intake path makes quite a bit of noise, and the stock airbox deadens those sounds. It can't quite get rid of all the tones, though, which is why the intake path also embloys two resonators: a side-branch resonator right off the intake tube that lays on top of the radiator, and an inline resonator right before the throttle body.
Aftermarket cone intakes are loud, becuase the intake noise is only deadened by a thin filter layer, the sound deadening from the rigid filter box is GONE, and the side-branch resonator is no longer used.
The increase in airflow actually has very little, if nothing to do with the increase in noise. It's the fact that now the intake sound has a direct path right out the engine...through the thin filter media.

If you look at the stock airbox, it has a resonator under the battery to muffle out the intake noise. In addition, the entire unit is closed (except for the scoop) so the noise is pretty much silenced. A cone filter is out in the open, closer to the driver than the scoop, and sucks in a bit more air. If you have cone, you will notice a hissing noise at idle. Notice how the stock intake doesn't make that sound? So, even at idle, a Maxima with intake is noticeably louder than stock.
BTW, I love the hissing sound. Makes the car sound wicked.
