Is it possible the ODO stop recording?
Yesterday one of my customer came in with engine check light on his 2000 Maxima. so I went out and do a code read, and I was looking at his ODO, and it has 260k miles. I was telling a customer, wow that's a lot, and I was telling him I have a 01 Maxima with 81k, and he told me his ODO is not correct since it stopped right around when he had swap a new engine around that miles, so he said it has like 300k miles by now. He was saying he loves this car so much he bought it brand new since then. I was feeling the same way about my Maxima. SO it is possible with ODO stop recording when you do an engine swap or how is it recorded by ECM or the VSS sensor? Any thoughts or experience?

Sure, it's possible. With the advent of the digital odometer in 1998, the VSS feeds a chip (integrated circuit) that then causes the numbers to be displayed on the digital display. While an engine swap shouldn't cause this, anything is possible. The VSS sensor could have been damaged but I would think that the check engine light should be on.
