Is this a slipping clutch?
While trying to accelerate on the highway (4th or 5th gear) the tach shoots up then slowly begins to fall back down and match the actual vehicle speed. I am not experiencing these problems in the lower gears unless I shift rapidly at high RPMs, then the engine doesn't bog but kinda sounds 'stuck' at a particular RPM. Am I just shifting incorrectly ?

Time for the ACT II. I guess after we have spent about $2K on my wife's VW (that has 100,000 less miles) fixing misc. items over the last two months she can't deny me preventive maintenance items, and just in time for the dry-kit.

I do a lot of highway driving as well (500 miles every other weekend) and my slipping clutch got REALLY annoying. You can't go wrong with the ACT.-hype
