Maxus 2007 location - Chicago?
Generally we try to get the hosting dealership to buy the food for us. 
If that doesn't work, then IMO pick something good locally and run with it. If there's a good BBQ or massican or whatever place that will cater, I wouldn't mind paying a few bucks per head (in advance) to guarantee good food at the event.

also might want to get the 'official t shirt' stuff done and prepaid as well. so you can say "Pay $50 for registration and get a T shirt, lunch at the track, lunch at the car show/meet, and your ticket for _________insert meet & greet activity here_________."
then add $15 for the car show, $xxx for the drag/dyno/track events, and so on, so forth.
actually have it ORGANIZED instead of just telling people to show up and pay.
(This is what I've tried to do the last few years, but that's impossible to do when dealerships and hotels and vendors come and go all the time. they need to be locked into place MONTHS ahead of time...)

I've probably already mentioned this, but I'm on the board of Directors for the Z Car Club of America... we took bids on the 2009 convention at the national Z convention the week before Maxus this year. 2007 will be at Daytona beach and the hotel, track event, and several other main events are already contracted out and written in stone. 2008 will be in Cleveland, and they have already got the hotel contracted and are in a bidding war with three race tracks right now.
That's just how far ahead things are planned when they're done 'right'.

That would be kinda tough seeing as everyone is pretty much going to be staying in hotels. They would have no way to prep food so they would end up going to the grocery store to get a salad or chips or something. Although, I suppose we could always just get some grills together and get a BBQ/picnic somewhere? That wouldn't be bad. Would have to worry about the weather, though. Restaurant would be nice, and hopefully not too pricey.
EDIT: Read through everything else and cattering to the event would be a great idea. People pay in advance as well. If the locals could suggest some options and contact them, pricing can start being worked on.

There is a Webber grill down by my house- 4 miles to be exac, just opened this winter/spring. I never been in that one, but the one in Oakbrook has a killer "wisconsin burger". We used to go there for lunch like once a week, when I worked in that area. You really do not need to go far into downtown Chicago to sample some really good food.
I highly recomend www.edelweissdining.com they have KILLER food there and have some of THE best beers in the world-German ofcourse, on tap. I have been there a few times and the food is cheap and excelent. Plus U can't beat the 2L beer mugs !

Giordanos has closed alot of their restaurants down (diff names now), and I think their franchaise fees got a lil to ridiciolus. Personally I like Nancy's Pizza better. Few that have had it agree.

If you don't book the track, I'll be running it anyways. Just got a hook-up. On of my best friend's partners at his Real Estate firm in Chicago is a member of Autobahn. I talked to him today and he is going to see if he can get a better deal on the track rental. He offered to have me as a guest regardless.

i have never been to a maxus, and living on the iowa/illinois border, the 2 hours there would be no sweat. wondering about how many people have attended these in the past, and if there is anything i can do i would be more than happy to help
