I tend to use the following analogy when explaining a clay bar.

A clay bar is similar to a loofa pad but for the paint. A loofa removes the dead skin on the surface of your body and brings up the new skin. The clay bar removes any embedded contamination in the finish and gives the finish a smooth feel. It also removes certain types of stains in the finish.

As for the wax, check into S100 (can be gotten at any Harley store), P21S, Meguiar's #16, Either of the Pinnacle waxes, or Einszett's Glanz Wax.

All of the above-mentioned waxes are great.

But there are so many different waxes/sealants which serve many different purposes. You have to specify what you're looking for in the wax before any good recommendations could be given.
Are you looking for durability? Gloss? Slickness?
