I would like to know if 17 X 8.5 with a 25 mm offset would fit on my '02 SE. I want to use 255/45 R17 rubber.

35 offset will work but not 25...

In the front, no way. That's the offset for late model Mustang wheels. Would probably stick out the fender about an inch. I've got 18x8.5 with +40 offset and 255/40/18 with no rubbing. But, there is NOT an extra 10mm clearance between the tire and the fender in the back. I would pass on those wheels.
