Rubbing issues

Ok, here is my dilemma, I have a 2000 Max with stock nissan 350z rims. In the front I have 225/45/18 and 245/45/18 in the rear. I was psyched when I finally put these rims on but only flaw is that I had rubbing issues in the rear everytime I hit a bump. With the stock suspension I was rubbing and now I have k-sports coilovers and I continue to rub everytime I hit a bump. Hence, I had was to set the damper to hard to prevent the car from bouncing. So you could imagine what my ride is everytime I hit a bump.

Anyways, I am not sure what the rim size is (probably 18 x 8, not sure) but would it be possible to fit a 235/40/18 tire in the rear?

Yes and that would be the correct tire size you should be running.
