Drivers in cars running 13.99 (8.59) seconds or quicker, and all dune buggy type vehicles runnning 14.00 (8.60) and slower are required to wear a helmet meeting SNELL 95 or SFI 31.1, 31.2, 41.1, or 41.2 Specs
I've got a 2000 Maxima with all standard engine parts, but soon to have a new exhaust system...
Is there a specific reference to find out what the general time is for my car? I know a standard maxima probably can't do 13.99, but what happens if I modify it enough that I can? How will I know when to start using a helmet?

The worst trouble you will get into is that they will tell you to get a helmet or you don't run again.
I always have mine in the car but don't usually wear it even though I am usually under the 13.99. Tinted windows help. Even when I do wear it I take it off after I cross the line because its usually hot and sticky and not nice to have to leave it on too long.

My friend took his 91 eagle talon TSI to the track... he went to track without a helmet as he did not think to run 13's. After a run of 13.5@99 the guys just told him he has to get a helmet or he cannot run again... u dont really get into trouble for not having a helmet, u just cant do another pass without one.

hey man, no worries ! they will be keeping an eye on you and that beastly maxima, if they see you running 13.9 and below, they will make sure you are wearing a good helment. When that time comes toss you on one of those maxima.org stickers on the helment and vqpower !
