seat height is your biggest issue. here's my idea:
buy the front seats and re-engineer them. remove the existing foam cushioning and use that yellow expandable foam construction sealant to fill the seats. the only problem is, it's brittle. to get around that just construct a metal armature from medium gauge metal dowels like those used in rack/shelving units. this also gives you the opportunity to build in more horizontal support if needed.
make the seat surfaces thinner and then just wrap, tuck and fasten the extra fabric. what's left of the rear seat bench will be more than enough fabric and material to cover the pass-through and keep it looking stock. if you like, you can make it dual colored. say your interior is grey, use black leather on the rear seats and grey cloth on the passthrough/rear deck.
mounting the seats would take some work, too, buy you can weld the aforementioned metal armature to a solid sheet of steel in the rear of the seat and use the stock mounting points for the seatbacks.

What if you used some rear seats from a 300zx 2+2? Or perhaps leaving the back part of the rear seat in, but use the lower portion of regular maxima front seats. Then you would just have to build the center console to clean it all up.
