Pedal travel versus throttle travel

Pedal travel versus throttle travel
Without having a video camera aimed at the throttle plate and a monitor inside my car, I cannot verify what I am sensing -- which is that I seem to be hitting maximum acceleration (hopefully, the WOT position) about 2/3 of the way down in the travel arc of my gas pedal.
I'd like to know if it is normal, because once I hit that point, any additional pedal movement does nothing to increase power or acceleration.
BUT, what about fuel consumption? That is, would I be using up any more fuel by mashing the pedal all the way down to the floor versus stopping at that 2/3 point in the pedal arc?
Other than ensuring that my throttle cable has the right amount of slack in it, how else would I know if I am actually hitting WOT at that point in the pedal arc?
Seems like I need to have another person (or the video setup) to figure this out.
Has anyone had to replace any part of their throttle cable assembly because it prevented the throttle from opening up all the way?
Enquiring throttles want to know.
