Disconnect battery for several hours - overnight to be certain.

I've successfully done this by disconnecting the negative battery cable, pushing the brake pedal for a little bit (probably not necessary, but I believe it might speed up the discharge of any residual capacitance), and letting it sit for 30-60 minutes... reconnect the negative battery cable and it should be reset.

yep, sure is. you will have to repair/replace whatever is causing the light to go off. then you can have it reseted by any obd2 diagnostic tester/machine. if you reset it without fixing it, then the ecu will just cycle the code back out and illuminate the cel again.

If I install a UDP should I reset the ECU that night after install, so it will adjust. I think I heard something about this. Anyone else think this would be beneficial?

the ecu will eventually adjust to any mod. most of what the udp does is free up horsepower so you will feel most everything you are going to get after you install it.

I would imagine an ECU reset is more for airflow-related mods (intake & exhaust)... or perhaps anything that modifies the engine management system (new MAF, etc.)
The main reason is for the Long Term Fuel Trim parameters... if you don't reset the ECU, I guess it's possible that the ECU could allow the engine to ping more (by running lean) until it finally realizes there is more air coming in than it previously assumed. Resetting the ECU resets it to a very "rich" condition, and it will discover the optimal fuel trim parameters over time from there on.
