I plan on changing the oil in my new Maxima after the first 1000 or so miles as a part of the break in process. I've also heard of other people changing out transmission and differential fluid too? Has anyone heard this or done it? Is it worth it?

I really don't think that it is necessary. Stick with the oil change and you'll be fine. You may want to change the tranny fluid or gear oil over to Red Line brand. It is much better than the oem fluid.
