Slow on the interstate

Slow on the interstate
Okay, so today I was on my afternoon commute back home and I wanted to pass all the slow pokes. so I push the pedal and the engine revs. takes me a good couple secs to accelerate from 70 to 80-85. I have never experienced such a slow reaction before.
I just installed new NGK Iridiums. Put in a new manifold gasket too.
I have not cleaned the MAF. I'm gonna do that.
Did not check Cats yet.
What other things could it be?
