I just bought a Rockford 500S amp and I wanted to know if I could run 2 of these subs at 2Ohms?

unless your amp is rated for 2ohm stable in mono(which it's not), don't do it. You can hook them up two channel. You would just be running at 4ohm per channel.

125 watts RMS x 2 at 4 ohms
250 watts RMS x 2 at 2 ohms
500 watts RMS x 1 at 4 ohms in bridged mode
