Try cleaning your TB/IACV and tighten up your throttle cable a little and it should help. You'll still have the delay though unless you do a 5spd swap.

You didn't mention if you have any CEL's? Your issue could be caused by a bad KS or other issues too of course.
Before I changed the knock sensor on my 98 max, i had a similar lag. When i would step on it, the response wasn't there for a couple seconds and it bothered me cuz i knew it should get going right away. Anyhow replacing the KS did the trick, now the power is there as soon as i press the pedal. When i took my old one off, there was no crack, just a little corrosion. It was bad though and causing the retarded timing. Get a new one off ebay, don't buy used.

I have an auto max and it's got very little lag. Some of it is in how you work the gas pedal - if you work at it a bit, over time you can get a feel for where your foot needs to be to get it to shift and you start doing it preemptively even.

If Jettas are beating up on you there are problems with your car for sure.

For real! Much better to do it in a controlled setting, drag strip or raceway. Plus you get a neat little ticket at the end proving your awesomeness and that of the 4th gens
