Colder plugs have a better heat conduction path than hotter plugs, so they draw heat away from the combusting gases, resulting in lower EGT's and more resistance to detonation in boosted engines.

A colder plug will drop your HP if you're not seeing a large(r) amount of horsepower. Most of the SC'd guys stick with 1 step colder because we don't see max boost until redline. With a turbo you've got max boost at 3000rpm, which would be by far the better candidate for 2 steps colder.
2 steps colder and 3psi at 3000rpm is no good!
