someone explain this to me....

the stock 5th gen 17x7 SE rims are a 45mm offset

if I run a 18x8.5 rim with a 25mm offset, the offset calculator says that the outside edge of the wheel will extend 39mm. So does that mean these rims will fit? I'm assuming its not going to look tucked, but rather too far out?

It'll look about 15mm too far out in the front, but perfect in the rear with some rubbing (fenders will need to be rolled), the ideal is somewhere around 38-40mm.

When I measure my 40mm offset, I have about 10mm to the outer edge of the fender flair, which is right about exactly where you want to be, about 5-10mm inside the fender. That gives the most aesthetically pleasing tuck.

Then again 5th gens might be slightly different.

All I know is that 3rd Gens have the lowest stock offsets of all the "current" Maximas, and I'm pretty sure that +25mm isn't going to fit well on a 3rd Gen (unless you get a fairly skinny tire) let alone on a 5th Gen. +25 is into the realm of RWD wheel fitments.

Given that you're increasing wheel width by 1.5" (0.75" each side) and ALSO pushing the offset outwards an additional 20mm, which is pretty significant, I would hazard a guess that no, they would not fit, even assuming you're not trying to shoehorn some serious meats on those wheels either. Look at 39mm on a ruler or caliper - it's a disturbingly large distance...
