Okay heres the steps you want to follow...
1. Disconnect the negative battery cable from battery
2. Drain the cooling system
3. Then follow the upper radiator hose to the timing belt end of the engine to locate the thermostat housing. Loosen the hose clamp and detatch the hose from its fitting.
4. Remove the bolts and detach the housing cover ( you may need to tap it with a hammer to loosen it)

Then slap in a new one

If you go buy the Haynes Maxima repair manual it has the steps i listed, but it also shows pictures, which always helps me.

I wanted to do this, and got as much as #3, but I cannot seem to be able to reach the bolts. the timing belt cover seems to be in the way and between strut tower and timing belt cover there is such a little room...

Is there something that I can do (besides removing the timing belt cover, which I don't even think will help) to do this?

there are 3 bolts, 12mm i think. You can use a regular 3/8 inch ratchet, with a 12mm deep socket, to open them. And when you install the new thermostat make sure than the bubble thingy is facing up.
