Ok, so instead of asking about Retrofits in a new thread, ive decided to bump this thread.
After reading all of the posts, ive become confused out of my damn mind.
-Whats the simplest way to do these in my 3rd gen?
-Whats the 1st thing i should purchase??
It just seemed like everybody had different opinions on how to do it. I just want the easiest way...

For single (high beam works by flipping a shield out of the way and exposing the full beam)you'd need a bixenon projector, and just cut a hole where the bulb goes and mount the projector in there (using an ebay style crystal-clear headlight assembly for the Maxima). As for what projector to use.... X5, and FX35 come to mind.
If you want dual bulbs (one high, one low) you can buy the E36 housing, then get a lowbeam-only projector and fit that where the lowbeam from the E36 used to go. Then to make it fit with the Maxima's curves, you can put a wade cover over it... if you're really handy you can actually mold the wade cover onto the E36 housing and corner light like Goon did:
