has anyone experienced this hesitation
Occationaly when I'm accelerating, my car goes steady till 2.5k at which point the rate of acceleration declines noticebly, but when it gets to 3k it pics up the pace again. What can be causing this? Oh yeah, it's a 98 5spd, and I'm pretty sure this is most noticeble in 2nd gear.

Its Normal
Maxima's have the highest gain in HP and Torque at this RPM level. It is 100% normal in most cases. I have noticed the same thing in my car but I look at it as a pseudo-powerband. Don't worry about it though...its a NISSAN thang'.

Your MAF sensor is dying. The clue here is that when it happens your car will not go past 2500 RPM's. Thats limp mode and it's exactly what your car does when the MAF goes bad.
Are you sure you have no CEL on? Is the bulb ok? Does it light up when you turn your key to the on position? Check the ECU again for any codes, it should be saving the info on whats failing.

You can get a used maf sensor for around $100 at a junkyard.
