Deep, you need yourself a wifi Elm adapter and a obd app. That can be had real cheap and you can then log live data. You can log a few runs with different setups, at about the same weather conditions, to see the AFR changes between stock vs. your midpipe.
This is what NMex suggested, I think its the best idea. No point paying for a dyno to test this, plus you would need two dynos for comparison (before/after) which aint cheap.

Here are a couple of pics of my new midpipe. I must say you can definitely tell the increase in power, and don't get me started about the sound when I mash on the gas!
