Should I be worried about dirt roads with pot holes and train tracks? Of course, I know I can't be zooming around like I used to at stock highth, but I don't want to crawl everywhere either. I'm a little out in the country in rural Florida, and we get an occasional high spot on those dirt roads or a poorly marked speed bump. I just don't want the car or the parts to get damaged. I'm looking to drop with Koni/Eibach on my 3rd gen, and add Matt's LTB2 and SFCs later.

The only time I've ever scraped my LTB2 is on dirt roads with a big hump between the tracks. It's easy to avoid if you drive slightly off center. If you have to drive on roads like that regularly, you might want to reconsider chassis mods and lowering. But you're unlikely to damage anything; you'd just scrape or bend the bars/SFCs a little.
